Grilled scallops a la plancha

Ingredients
- 8 large scallops
- 200 g upright oyster mushrooms
- ½ bunch green onions, thinly sliced salt and pepper
- 30 ml olive oil
- 15 ml butter
- 15 ml truffle tapenade
- 60 ml plain yogurt
Instruction
- On a plancha over moderate heat, brown the mushrooms, adding salt and pepper and a drizzle of olive oil. Continue cooking over moderate heat.
- Before placing the scallops on the Plancha, season them with salt and pepper. Drizzle olive oil directly over the scallops.
- Place the scallops on the griddle over moderate heat and let them caramelize. Add a little butter to accelerate caramelization. Brown the scallops for 2 minutes on each side to obtain a good caramelization.
- On top of the mushrooms, add a pinch of green onion and a spoonful of truffle tapenade. Mix well.
- Place a bed of plain yogurt on a plate, followed by two scallops, and top with mushrooms.
Serve up!
