Grilled scallops a la Plancha® griddle

Ingredients

  • 8 large scallops
  • 200 g upright oyster mushrooms
  • ½ bunch green onions, thinly sliced salt and pepper
  • 30 ml olive oil
  • 15 ml butter
  • 15 ml truffle tapenade
  • 60 ml plain yogurt

 

Instruction

  1. On a griddle over moderate heat, brown the mushrooms, adding salt and pepper and a drizzle of olive oil. Continue cooking over moderate heat.
  2. Before placing the scallops on the Plancha® griddle, season them with salt and pepper. Drizzle olive oil directly over the scallops.
  3. Place the scallops on the griddle over moderate heat and let them caramelize. Add a little butter to accelerate caramelization. Brown the scallops for 2 minutes on each side to obtain a good caramelization.
  4. On top of the mushrooms, add a pinch of green onion and a spoonful of truffle tapenade. Mix well.
  5. Place a bed of plain yogurt on a plate, followed by two scallops, and top with mushrooms.
    Serve up!
