Grilled scallops a la plancha

Ingredients

  • 8 large scallops
  • 200 g upright oyster mushrooms
  • ½ bunch green onions, thinly sliced salt and pepper
  • 30 ml olive oil
  • 15 ml butter
  • 15 ml truffle tapenade
  • 60 ml plain yogurt

 

Instruction

  1. On a plancha over moderate heat, brown the mushrooms, adding salt and pepper and a drizzle of olive oil. Continue cooking over moderate heat.
  2. Before placing the scallops on the Plancha, season them with salt and pepper. Drizzle olive oil directly over the scallops.
  3. Place the scallops on the griddle over moderate heat and let them caramelize. Add a little butter to accelerate caramelization. Brown the scallops for 2 minutes on each side to obtain a good caramelization.
  4. On top of the mushrooms, add a pinch of green onion and a spoonful of truffle tapenade. Mix well.
  5. Place a bed of plain yogurt on a plate, followed by two scallops, and top with mushrooms.
    Serve up!
