Potato and sweet potato fries

Serves : 4 
Preparation : 10 minutes
Cooking : 30 minutes

 

Ingredients

  • 500 g (1,1lb) firm potatoes
  • 500 g (1,1lb) sweet potatoes
  • 6 tbsp. (90ml)olive oil
  • 2 tbsp. (30ml) flower of salt
  • Curry or paprika according your taste

 

For the mojo verde sauce :

  • 50 g (0,11lb) fresh coriander
  • 2 cloves garlic
  • 100 g (0,22lb) green pepper
  • 2 tbsp. (30ml) vinegar
  • 8 tbsp. (1/2 tasse) olive oil
  • 1/2 tps. (2,5ml) of cumun powder
  • A little coarse salt

 

For the mojo rojo (hot) sauce :

  • 100 g (0,22lb) red pepper
  • 1/4 tps. (1,25ml) paprika
  • 1/2 tps. (2,5ml) of cumin
  • 8 tbsp. (1/2 tasse) olive oil
  • A little coarse salt

 

Instructions

  1. Place all the ingredients for the verde or rojo sauce, depending on the desired sauce, in the bowl of a food processor and blend until you obtain a pasty and homogeneous mixture. Reserve. Wash the potatoes and sweet potatoes.
    Peel the sweet potatoes, but not the potatoes. Cut them all into fries.
  2. Heat the plancha, place the fries on the plancha and drizzle them with olive oil. Cook for 30 minutes, turning them regularly so that they brown on each side.
  3. Season the fries with fleur de sel, paprika or curry according to your taste, and enjoy with the mojo sauce.
