Mini skewers of duck with apricots

Serves : 4

Ingedients

  • 2 duck breasts
  • 16 dried apricots
  • 4 sprigs oregano, leaves removed
  • 2 tbsp. liquid honey
  • A few pinches of Espelette pepper
  • 40cl hot tea
  • Salt

 

Instructions

  1. Soak the apricots in the tea for at least 2 hours. Don't hesitate to soak them the day before - they'll taste even better.
  2. Heat the plancha over high heat.
  3. Cut the duck breasts into 16 cubes.
  4. Prick an apricot on each skewer. Then prick a piece of duck breast with the skin side at the end of the pricks. Place a few oregano leaves between the apricots and the duck pieces.
  5. Brush skewers with honey and season with salt. Place them skin-side down on the plancha and allow to brown. Then brown on all sides.
  6. Finish by sprinkling the Espelette pepper over the skewers.
