Tomato butter prime rib

INGREDIENTS

  • 1 boneless prime rib, cut into the T-bone
  • 2 stems of rosemary, stripped
  • 1 spring onion
  • 3/4 cup or 75 g sun-dried tomatoes in olive oil
  • 1/3 cup or 45 g pitted black olives
  • 1 garlic clove
  • 1/2 cup and 1/8 cup or 125 g soft butter
  • Salt and pepper

 

INSTRUCTIONS

1. Blend the rosemary leaves, onion, tomatoes, olives and garlic. Add the butter and mix again.
2. Heat the plancha over high heat and cook the rib of beef for around 30 mns, turning it very 5 mns. Season with salt and pepper, then leave to rest for 10 mns on a plate with a lid or a dome.
3. Cut the prime rib into slices and add one tbsp of sun-dried tomato butter on each slice.

 

TIP

If you want medium doneness, cook the slices of beef again on the plancha, for 1 to 2 mns on each side.
